It’s been awhile since I have posted a simple recipe. Today, while I was making homemade macaroni and cheese, I decided to take some pictures and add it here to share with all of you.
This recipe is adapted from the original of Racheal Ray’s in here book, Rachael Ray 30-Minute Meals . I have tweaked it just a bit. It is so simple and much healthier than boxed macaroni and cheese that comes with that bright orange powder! {blech}
This takes probably no more time than the boxed macaroni and cheese, and it is a huge hit around here.
Here is the recipe:
1 lb. cooked pasta (elbows or corkscrews are our favorite)
1 Tbsp. Olive Oil
2 Tbsp. butter
3 Tbsp. flour
1 1/2 cups milk
2 cups shredded cheddar cheese
salt and pepper to taste
Melt the olive oil and butter together in large skillet.
Once melted, add flour.
Whisk until combined. Cook about 2 minutes.
Add milk and continue whisking.
Once bubbling and mixture is thickened, remove from heat and stir in cheese.
Stir until all of the cheese is melted.
Add pasta to the skillet and toss to cover with cheese sauce.
So simple and so fresh. Enjoy!
