I make this recipe quite often, especially during summer. It is so versatile and so simple.
Cut up an assortment of veggies that you like. Our favorites are: yellow squash, zucchini, eggplant, peppers, red or yellow onion, cherry tomatoes, etc. Place them on a cookie sheet lined with foil. Toss with some extra virgin olive, salt and pepper. Cook them in a very hot oven of about 500.
Roast until nice and tender.
These can be used as:
~ a side dish
~served over chicken
~tossed with pasta and cheese (parmesan, feta, or whatever you like)
~served cold with pasta and add some vinaigrette
~in a wrap with chicken or cheese
~in a panini with chicken or cheese
~served cold on some nice crusty bread with parsley
The possibilities are endless!
