Simple Lentil Soup

I am in love with this soup. It is so delicious and incredibly easy. It’s one of those recipes I make for my friends and then when they ask for the recipe, it’s almost embarrassing to say how easy it is.  But isn’t that the best kind? So good for you and so simple.

Simple Lentil Soup: (this makes a large portion, but that’s how I roll-lots to eat all week for lunch or to serve to friends!)

1 bag 16 oz lentils, dried
3 stalks celery (chopped)
2 onions (chopped)
2-3 carrots (chopped)
(2) 32 oz.  cartons chicken stock
salt and pepper to taste
olive oil

Put a little olive oil in a large pot and add chopped veggies. Cook for a few minutes until slightly tender. Add lentils and stock. Bring to boil. Reduce heat and simmer about 30 minutes until lentils are tender.
I like to top mine with some grated parmesan cheese! Yum.

I could probably eat this everyday. So good!
