I have been making Potato Soup forever. And it is actually one food the whole family loves! Very rarely these days do I make something that everyone is happy with!
So I am happy that the crisp cool air is coming, as well as the soups, pies, and comfort foods that come with it!
Here is my SIMPLE recipe for Potato soup:
~About 8 potatoes, peeled and cut into chunks
~One box of chicken stock
~1 or 2 onions, chopped into large chunks
~a few tablespoons butter
~salt and pepper to taste
~shredded cheddar cheese for topping
Melt butter in large pot. Add onion and cook until tender. Add potatoes and broth. Bring to a boil. Turn heat down to low, add salt and pepper, and simmer about an hour.
Using the blender, puree the soup until nice and smooth.
Top with shredded cheese.
Makes a great supper served with homemade bread or salad.
