I am in love with this soup. It is so delicious and incredibly easy. It’s one of those recipes I make for my friends and then when they ask for the recipe, it’s almost embarrassing to say how easy it is. But isn’t that the best kind? So good for you and so simple.
Simple Lentil Soup: (this makes a large portion, but that’s how I roll-lots to eat all week for lunch or to serve to friends!)
1 bag 16 oz lentils, dried
3 stalks celery (chopped)
2 onions (chopped)
2-3 carrots (chopped)
(2) 32 oz. cartons chicken stock
salt and pepper to taste
Put a little olive oil in a large pot and add chopped veggies. Cook for a few minutes until slightly tender. Add lentils and stock. Bring to boil. Reduce heat and simmer about 30 minutes until lentils are tender.
I like to top mine with some grated parmesan cheese! Yum.
I could probably eat this everyday. So good!
“Are we focused on making our kids look good, which in turn makes us feel successful? Or are we focusing on their hearts? God knows our hearts and our children’s hearts, and no test score can override that. We must start with their hearts and ours. We must not be caught up in what others think is success. Our goals come from the Lord and what He has called us to do. We work for an audience of One.” ~excerpt from my new ebook…”Called Home.”
